Blueberry Mint Granita

Celebrate this summer with a sweet, shaved ice cocktail. Prosecco and ginger ale, frozen with fresh blueberries, come together, light, bright and refreshing.

Blueberry Mint Granita

  • 2 cups prosecco
  • 1 cup ginger ale
  • 1/2 cup fresh blueberries
  • 1/4 cup honey
  • 2 sprigs of fresh mint, chopped fine
  • Mint sprigs & blueberries for garnish

How-To:

Mix all ingredients in a large bowl (except garnishes) until well-mixed. Pour into a shallow loaf pan or Pyrex. Cover with plastic wrap and freeze for at least two hours.

When your granita is frozen, scrape with a spoon to create a shaved ice effect. Serve in champagne or cordial glasses.

Garnish with blueberries and fresh mint.
